Kadhi pakora recipe
Most kadhi recipes treat ghee like a garnish you remember at the table. I put it in the last tadka. Two tablespoons of cow ghee for four plates. The pakora can fry in oil. The gravy is sour dahi and besan, simmered until it coats a spoon. A ladle of fat on top just sits there looking yellow.
This is Punjabi kadhi pakora. Gujarati kadhi is a different pot, thinner, often sweet, usually no pakora. Heat for the tadka is on cooking with ghee. I use the same mustard-jeera move as ghee dal tadka, poured at the end so the dahi does not stew in fat from minute one.
Ghee for the finish

Ingredients and dahi
Four plates, one pot for the kadhi, a kadai of oil for the pakora. The tadka is a small pan at the end. Use dahi that already tastes sour. Fresh sweet dahi makes a flat gravy. Leave it out for a few hours, or use yesterday's pot.

- 1/3 cup besan for the kadhi
- 4 cups water
- 1/2 tsp turmeric, 1 tsp grated ginger, 2 green chillies slit
- 1/4 tsp methi seeds, salt
- 1 cup besan for pakora, 1 medium onion sliced, 1 tsp ajwain, pinch of hing
- Oil for frying
- 2 tbsp cow ghee, plus 1 tsp to finish if you want
- 1 tsp mustard, 1 tsp cumin, 2 dried red chillies, curry leaves
- 1/2 tsp Kashmiri chilli optional, off the heat
Cow ghee, not buffalo, on a dahi gravy. The fat itself is what is ghee.
Pakora batter
I want a batter that holds on a spoon. Watery batter makes pakora that drink the kadhi and disappear. Stiff batter stays raw in the middle. Onion, ajwain, chilli, salt. I fry these in ordinary oil and keep the jar for the tadka.
Method
About an hour. Most of the risk is in the first ten minutes, while the besan is still raw and the dahi is still cold.
Whisk, then heat
Room-temperature sour dahi, besan, turmeric, salt, and water. Whisk until it looks like thin buttermilk, no dry pockets stuck at the bottom. Taste it. You want it already a bit sour. The raw besan taste cooks out. Pour it into a pot that is not ripping hot. Medium heat, stir until it comes to a boil, 12 to 15 minutes, scraping the base so it does not catch. Then an easy simmer until it coats a spoon. I drop the methi seeds in while it simmers. If the dahi was too fresh, squeeze lemon at the table. Do not dump amchur into a hot pot and hope.
Fry the pakora
Mix the onion batter while the kadhi heats. Medium-hot oil. Small pakoras, golden, not dark. Drain them. Do not tip a wet ladle of oil into the gravy with them. If you fried a batch in the morning, soak them in warm water for 2 minutes so they are not rocks when they hit the kadhi.
Drop the pakora
Last 5 to 8 minutes, once the kadhi already coats a spoon. Ginger and slit chilli can go in with them. Leave the pakora in from the start and they swell into sponge. If the kadhi looks thin, simmer it uncovered before you add them. Do not sprinkle dry besan into a hot pot to thicken it. That is how you get lumps on purpose.
Ghee tadka
Two tablespoons cow ghee, medium. Mustard until it pops. Cumin. Dried red chilli. Curry leaves will spit. Hing. Kashmiri chilli off the heat if you want the red, because it burns fast. Pour it over the kadhi. I stir once. The top can stay a little stained. Burnt methi or black chilli is how this turns bitter, and ghee will not hide that.
Failure fixes
If the kadhi went wrong, it was the whisk or the heat. The masala box is rarely the problem.
Lumps
Dry besan into a hot pot, or a whisk you gave up on. Mix it cold. Strain if you already have lumps.
Split, grainy
Fridge-cold dahi into a ripping pan, or a hard boil before the besan cooked. Medium heat. Stir until it boils, then ease off.
Bitter
Methi or chilli burnt in the tadka. Medium heat. Kashmiri chilli off the heat if you use it for colour.
Pakora mush
They sat in the kadhi too long, or you packed them at 8 am for a 1 pm lunch. Last 5 to 8 minutes. Same-day tiffin.
What to serve
I eat this with rice. Plain is fine. Ghee rice if you already have it on. Hot ghee chapati if you want bread instead. Paratha only if kadhi is the one wet thing on the table. Rajma masala is a different Sunday. Palak paneer if you want a green bowl the same week, not on the same plate.
