Paneer notes

I soak store cubes in hot water for 10 minutes so they stop tasting like the fridge. A light ghee sear is fine. Hard frying is how you get squeaky bites. This is not paneer ghee roast. That dish wants a dry masala coat. Here the cubes just sit in the green.

Method

Forty-five minutes if the palak is already washed. Mess up the blanch and the rest is damage control.

Blanch and shock

Salt a pot of water and get it to a real boil. Drop the leaves. Forty-five to sixty seconds, until they wilt and stay bright. Straight into ice water. Squeeze like you mean it. Wet palak makes watery palak.

Blend

Palak, green chilli, ginger. Almost no extra water. Thick puree, not juice. A few flecks of leaf are fine. A smoothie is how the gravy weeps later.

Ghee tadka

Two tablespoons cow ghee, medium. Cumin until it crackles. Garlic sliced, softened, not black. If you use onion, cook it until it turns translucent, then stop. Browned onion plus palak is leftover-canteen green. I skip tomato. If you want tang, squeeze lemon at the table. A tomato in the pan just muddies it.

Short simmer, then paneer

Puree and salt into the tadka. Uncovered, 4 to 6 minutes. Stir. If it catches, a spoon of water, not a cup. Paneer in for the last 2 minutes. Leave it longer and the cubes toughen.

Finish

Crush kasuri methi in your palm. Garam masala now, not at the start. Cream off the heat if you want it. One teaspoon ghee on top, then serve. Sitting in the kadai is how it dulls.

Bitter

Stems, old palak, or a long cook after blending. Blanch short. Ice. Four to six minutes. Then stop.

Khaki
